Indian style Potato (Aloo) and Broccoli stir fry sabzi is made out of potatoes, Broccoli (green Cauliflower) mixed with sauce of onion and tomato with the blend of Indian spices. I am going to show how to make Indian style Broccoli (kind of green Cauliflower) fry together with Potatoes (Aloo). Broccoli is very healthy and its available in German supermarkets (i hope in US too) at cheap price. This is a brand new recipe which my wife likes a lot. I will try to include more of broccoli recipes (including my favorite Broccoli Paratha) in the upcoming days, because of its health benefits. Here is the recipe for Indian style Aloo Broccoli curry. As usual, I will try to keep the recipe preparation steps as simple as possible, so that it will be easy for capsicum to Indian cooking and cuisine. Step by step easy preparation to make Indian style (little spicy) Broccoli Aloo curry is given below. Try this brand new recipe and share your tasty experiences with us.
- Broccoli - 400 gms
- Potato – 4
- Onion – 1 (chopped)
- Tomato -1/2 (chopped)
- Garlic - 1tsp. (grated)
- Cumin- ¼ teaspoon
- Turmeric - ½ teaspoon
- Coriander powder - ½ teaspoon
- Garam Masala - 2 tsp
- Chilli powder -1/2 tsp
- Salt to taste
- Lime juice - ½ teaspoon
Slice (Cut) Potatoes : Take 3-5 Potatoes (Aloo or Alu) and cut/slice them into lengthy pieces.
Slice (Cut) Broccoli : Take 400gms of fresh Broccoli (green Cauliflower) and cut/slice them into small florets (same as cutting Cauliflower).
Potato Preparation: Heat 1 tbsp. vegetable oil in a nonstick pan, add sliced Potato with salt. Fry for 5mins. So that vegetable gets partially cooked. When it is half cooked transfer the vegetables to a bowl and close it.
Broccoli Preparation: Heat 1 tbsp. vegetable oil in a nonstick pan, add sliced Broccoli with salt. Fry for 5mins. So that vegetable gets partially cooked. When it is half cooked transfer the vegetables to a bowl and close it.
Tempering and Frying ingredients Heat 2 tbsp. oil in a pan, add cumin seeds and onions. When the onions turn golden color, add Ginger and garlic, fry until the raw flavor goes away. Add chopped tomatoes and fry until it mashes completely. Now add turmeric, coriander powder, chili powder.
Final Touch: Add half cooked Potatoes and Broccoli to the ingredient mixture, cover the pan lid and cook it in high flame for 5 mins. When broccoli and potatoes are tender sprinkle little Garam masala on it and cook for 5 more mins in a low flame. Finally add lime juice, stir the curry for two more minutes. Switch off the flame. Garnish the curry with coriander leaves. Easy and tasty preparation of Indian style Potato Brocolli curry ready.
Tips:Do not cook the Broccoli and Potatoes too long. This recipe will give much taste only when Broccoli and Potatoes are half cooked. Also, eating fresh vegetables half cook is very good for health.
