Beet root Broccoli curry (chukandar broccoli ki sabji)
Before telling you what is broccoli beetroot curry, I would like to explain why did i select beetroot and Broccoli as vegetables for this curry. Beetroot, also known as the table beet, garden beet, cukundar, betavulgaris, red beet or informally simply as beet. Beet root can be eaten as raw or in salad with a dressing of mustard oil or vinegar. Beet root is used to cure anemia due to its richness in Vitamins A, C and iron and calcium. Its used to increase the stamina of the body. Modern research says that drinking 1 glass beetroot juice improves the energy levels, hair growth and healthy skin. Broccoli (Green cauliflower) has a large green flower heads, which is rich in fiber, carotenoids, vitamin A, vitamin C and vitamin K , also popularly known natural medicine for stomach and colon cancers. Beetroot Broccoli Sabji is prepared from the mixture of healthy beetroot and broccoli with the flavor of Indian exotic spices.
As we are living in a small city in Germany, we do not have opportunity to get most of the Indian vegetables. Luckily, we have some Indian online shops, so that we could buy original Indian spices and groceries. I always try to cook German vegetables in Indian style. My dietician used to advice that Indians who are living abroad are lack of Iron / Hemoglobin. She always advice me to consume more of iron rich foods like broccoli, beetroot, spinat etc. This is the short story behind this healthy recipe of Beetroot Broccoli curry. I could not able to eat boiled broccoli just like that, since I got adicted to Indian taste. So, I tried to cook many variation of broccoli. Finally, Beetroot Broccoli sabzi worked out for me. Beetroot Broccoli sabji is made out of beetroot, broccoli, besan flour (see tips why i added this) with exotic traditional indian spices. My homemade recipe turned out really delicious, moreover its very healthy. I am trying to keep the recipe preparation steps as easy as possible, so that it will be easy for all levels of Indian cooking. Indian Recipe – Step by step photos – How to make Beet root Broccoli curry
Ingredients:
Beetroot – 3 pieces
Broccoli – 200gms
Besan Gram Flour – 3 tbsp.
Garlic – 3 flakes
Onion -1
mustard seeds – 1/4 tsp.
cumin seeds – 1/2 tsp.
chana dal – 1/2 tsp.
urad dal – 1 tsp.
Turmeric – small pinch
red chilipowder -1tsp.
Garam masala -1 tsp.
curry leaves – 10
Oil for cooking
salt to taste
Method of Preparation – Beet root Broccoli curry (chukandar broccoli ke sabji):
Step 1 – Broccoli Preparation:
Heat 1/2 tsp oil in a Pan, add sliced broccoli pieces (see my other post for a nice image of sliced Broccoli florets) with salt. Cover the lid cook it in a steam for 6 mins. If you add broccoli with salt, it leaves water. This water is sufficient for cooking broccoli. When the broccoli half cooked, transfer the broccoli pieces to a bowl and cover the lid.

Step 2 – Beetroot Preparation:
Cut the beetroot into small pieces (see the image below). Take a pressure cooker, add beetroot pieces with salt and little water. Cook it until 2 whistles. After pressure get released, filter the water (don’t throw away. later we need cooked beetroot water in Step 7) and keep the dry beetroot pieces.

Step 3 – Tempering and Frying:
Heat oil in a non-stick pan and add mustard seeds, when it sprinkles, add cumin seeds, curry leaves, urad dal, chana dal and fry it for few mins until all the ingredients turn to light brown color.

Step 4 – Mixing chopped onions:
Now add chopped onions to the tempering. Fry until it turns golden brown colour. Add masala powder (turmeric, red chili powder and garam masala) and mix well.

Step 5 – Mixing Beetroot pieces:
Add cooked beetroot to masala ingredients which is in the pan. Cook it in a low flame for 2 mins.

Step 6 – Mixing Broccoli pieces:
Now, add Broccoli pieces to the masala mixture and mix all the ingredients well. Cover the lid cook it for 2 minutes.

Step 7 – Add Besan (Gram / Chickpeas) Flour:
Sprinkle besan flour on top of the mixture. Now, add filtered beetroot water (from Step 2) mix well and cover the lid. Cook the curry until the curry becomes thick. ( If you have more water, you can prepare Beetroot rasam. I will explain you in the upcoming posts).

Step 8 – Final Touch – Garnishing:
